Date Night Chicken Tacos

20130428037Our favorite restaurant in D.C. is Rosa Mexicano. I LOVE their chicken tacos and the table side guacamole is amazing. When I was at the library last weekend, I found this cookbook.  It’s filled with tons of recipes including my favorite Chicken Tacos, Guacamole, and Margaritas. It also includes recipes for salsa, side dishes, and desserts.

Pat and I decided to pick a few recipes and have a Rosa Mexicano date night at home. We picked the adobo marinated chicken tacos, guacamole, and Mexican style street corn. We had to adapt the recipes for the ingredients we had at home. The guacamole came out great. Pat made that while I was working on Project Life.20130428026Pat also made us Margaritas to drink while we cooked the chicken and corn. 20130428027The chicken came out amazing!! Seriously so good. We marinated the chicken the night before. We made the marinade with dried Guajillo chiles, garlic, chipotle in adobo, vinegar, cumin, cinnamon, salt, and olive oil. (This is adapted from the cookbook) When we were ready to make the tacos we cooked onions and peppers in a big skillet. Next we cooked the chicken, then sliced it and added everything back to the pan. We topped it with shredded Monterey jack cheese and put the whole pan in the oven until the cheese melted.20130428030We served the tacos with a little salsa verde and Mexican style street corn on the side.20130428034The corn was good but I’m not sure i’ll make it again. We did make our own queso fresco though, which came out great. We used this recipe it came out very soft and creamy. 

We will definitely be making these tacos again. I really want to try to cook the chicken on the grill when the pool area opens. The marinade is so flavorful that the tacos are amazing without a ton of toppings.20130428035 Chicken Taco Recipe:

Ingredients for the marinade

2 Guajillo Chiles (Seeds and stem removed)

1 tablespoon chipotle in adobo

3 garlic cloves

1/2 teaspoon cumin

1/4 teaspoon cinnamon

1/3 cup water

2 tablespoons olive oil

1 tablespoon vinegar

salt to taste

1 lb boneless skinless chicken

Directions for the marinade

Combine guajillo chiles, garlic, spices, water, oil, vinegar and salt in a blender. Blend until smooth and then taste. Add the chipotle in adobo if you want it spicier and add more salt if needed. Pour the marinade over the chicken and mix. Refrigerate overnight.

Ingredients for tacos

olive oil

1 large onion

1 red bell pepper

marinated chicken

4 ounces Monterey Jack Cheese

small flour tortillas

Directions for tacos

Preheat the oven to 400 degrees. Heat a large pan (oven safe) on medium heat and add 1 tablespoon olive oil. Add the onions and peppers and cook until softened. Remove onions and peppers from pan. Add another tablespoon olive oil. Turn up the heat to medium high. Add the chicken to the pan in a single layer. Brown the chicken on each side and cook until cooked through. Remove the chicken from the pan and slice into bite sized pieces. Add the chicken, onions, and peppers back to the pan. Top with the cheese. Wrap the tortillas in foil and place in the oven. Put the pan in the oven for 5-10 minutes until the cheese is melted. Serve the tacos with salsa verde. Some great side dishes would be black beans and Mexican style street corn, but the tacos are great on their own too!
