My Weekly Menu Plan 6/08 – 6/14


I have big plans for this week including lots of blog posts, craft projects and some shopping. We’ll be keeping things really simple again this week! 

I’ll only be cooking a few times and eating lots of leftovers. I’m really excited to make Roasted Vegetable Enchiladas! I’m thinking about making this ahead of time so its ready to just stick in the oven!

Here is our plan for the week:

Saturday: Pasta with Swiss Chard (inspired from the Farmer’s Market)

Sunday: Breakfast for dinner- Omelets, Hash Browns and Sausage

Monday: Caprese chicken sandwiches

Tuesday: Slow-Cooker Chicken Tikka Masala 

Wednesday: Leftovers

Thursday: Roasted Vegetable Enchiladas 

Friday: Leftovers
