After listening to episode 004 of elise gets crafty, I really wanted to try out the idea of a creative field trip. Staying home all all the time can get so boring and I need to get out of the house more often. Once I get into a creative funk, its really hard for me to get out of it.
I picked a Friday when the weather was perfect and drove down to Garden of the Gods with my camera and a notebook. I knew a creative field trip would have to include going to Garden of the Gods, because really there is no better place around here to find inspiration.
May just flew by, but I have a feeling that June is going to be even busier. Life around here is going to be pretty crazy this month as we work on getting moved into our house.
My goals for June:
1. Finally finish our patio set! We only worked on this a little bit in May and I really want to finish it and move it over to our house so we can start using it.
2. Move into our house. We have a few projects we’re working on and need to finish before we start moving.
3. Find a balance between house projects/ moving and enjoying our first summer in Colorado.
04 Avocado Caprese Chicken Sandwich
Bread: Ciabatta Roll
Toppings: Cooked Chicken (marinated with the balsamic vinaigrette), avocado, 2 tomatoes, small bunch basil, 8 ounces fresh mozzarella.
Sauce: Balsamic Vinaigrette
1/3 cup olive oil
2 Tablespoons balsamic vinegar
1 clove garlic
1 teaspoon honey
1 teaspoon mustard
salt and pepper
Note: Since balsamic vinaigrette is a thin sauce, I usually mix the tomatoes, basil and mozzarella in a bowl with a little bit of the balsamic vinaigrette. These sandwiches can be messy, but we just pile everything on the roll.
These sandwiches are one of our favorite dinners during the summer. Light and fresh!
Lately, I’ve been obsessed with canning. I first tried it last November and made a small batch of apple butter. It was a little stressful because I didn’t know what I was doing.I decided to try it again and checked out a bunch of books from the library and bought Preserving by the Pint. Sometimes I need to do a project just for fun, without over thinking it. That’s exactly what I did with this dress. The only plan I had was just to sew a dress, that’s it.
I used a ribbed tank top for the top (to make things easier) and a yard of a striped knit fabric for the bottom.

Succulents are my favorite indoor plants! They come in so many different varieties. Ever since I read this post, I knew I wanted some potted succulents in my house. We are moving into our new home soon, and I figured it was time to make this project happen.
Project: Color Blocked Terra Cotta PotsWhat you’ll need: Potting soil (cactus blend), fine gravel, 3 terra cotta pots and dishes -varying sizes, 3 small succulents (I bought mine at lowe’s), acrylic paint, paint brush and painters tape. Time: 2 hours (most of that is waiting for the paint to dry)
We are going to Estes Park for an extended weekend, so I won’t be cooking on Memorial Day this year. If I was cooking, these recipes would definitely be on the menu!
