Bread: Ciabatta Roll

Toppings: Cooked Chicken (marinated with the balsamic vinaigrette), avocado, 2 tomatoes, small bunch basil, 8 ounces fresh mozzarella.

Sauce: Balsamic Vinaigrette
1/3 cup olive oil
2 Tablespoons balsamic vinegar
1 clove garlic
1 teaspoon honey
1 teaspoon mustard
salt and pepper

 

Note: Since balsamic vinaigrette is a thin sauce, I usually mix the tomatoes, basil and mozzarella in a bowl with a little bit of the balsamic vinaigrette. These sandwiches can be messy, but we just pile everything on the roll.

These sandwiches are one of our favorite dinners during the summer. Light and fresh!

Tortillas: Small flour tortillas

Filling: Crock Pot Honey Sesame Chicken

Toppings: Asian Slaw– mix together the following ingredients
1 head green cabbage
1/3 cup lime juice
1 tablespoon honey
1/4 cup cilantro
1/4 olive oil
salt and pepper to taste

Sauce: Peanut Sauce

These tacos are a bit of work putting together all the different components but so worth it! The chicken is really good on its own but even better on these tacos.

My New Favorite Bread Recipe

I first saw this bread recipe when I was looking through Elise’s 40 Loaves project for some bread baking inspiration. It looked so easy that I had to give it a try!

This bread involves a lot of waiting but couldn’t be easier to throw together. I mixed up the dough on 1:00 pm on Sunday, before we left to watch the Superbowl. Because my house is not 70 degrees right now, I let it rise for the full 18 + hours. On Monday morning at 8:00 am I folded over the dough, let it rest for 15 minutes, and then gently formed the dough into a ball. After that I let it rise for 2+ hours.

I preheated my oven with the dutch oven in it to 425 degrees. (I was afraid to put my Dutch oven in a 450 Degree oven so I lowered the temp a little.) The tricky part of the whole recipe is getting the dough into the Dutch Oven. I flipped over the towel it was rising on and dumped it into the Dutch Oven. I didn’t look pretty at first but it baked up just fine!

This is the best and easiest bread I have baked in a while. It’s also the cheapest because the recipe only calls for 1/4 teaspoon of yeast, which means I can bake a bunch of loaves from just one packet of yeast.

It seriously tastes like an artisan loaf from the store! I think am going to get in the habit of baking this bread once a week.

dough: our favorite pizza dough (from this cookbook)

sauce: homemade pizza sauce (This is a good recipe if you don’t have one)

cheese: mozzarella and cheddar

toppings: Chorizo (1/4 lb, cook in a skillet prior to making the pizza), red bell pepper, cilantro, and scallions

special instructions: I waited to add the cilantro and scallions until pizza was almost done, (with about five minutes left in cooking time)

We bake our pizzas on a pizza stone at 415 degrees for about 20 minutes.

This was our first time putting chorizo on pizza and it was really good, especially with the cilantro and red pepper.20140104011

These are some of our favorite foods and we love to play around with different topping combinations. We make pizza almost once a week and have tacos and sandwiches pretty often as well. First up is a pizza recipe. Lets get started!

01 Pesto & Artichoke Pizza

dough: our favorite pizza dough (from this cookbook)

sauce: homemade pesto (this is a good recipe if you don’t have one)

cheese: mozzarella and parmesan

toppings: 1 can artichokes, 2 roma tomatoes, 2 strips bacon, and 1 onion caramelized

special instructions: I marinated the artichokes and tomatoes with a little lemon juice, garlic, salt and pepper before putting them on the pizza.

We bake our pizzas on a pizza stone at 415 degrees for about 20 minutes.

Overall thoughts: This is pizza was super yummy. I couldn’t stop eating it. Its salty from the bacon, sweet from the caramelized onions and tangy from the artichokes!20131222021-Edit-2_edited-1
